As it opens, aromas of damp forest floor, dried chili, and lime peel unfold, followed by a soft touch of leather, mesquite smoke, and fermented fruit—characteristic of the rustic Agave Cenizo. On the palate, the mezcal is robust, savory, and complex. It starts with bold flavors of roasted agave, white pepper, and mineral-rich earth, then moves into layers of eucalyptus, anise, and grilled pineapple.
