The nose is delicate and layered, with elegant aromas of poached pear, golden raisins, and vanilla custard, followed by hints of honeycomb, polished oak, and heather blossom. With time, it reveals deeper notes of dried apricot, waxy lemon peel, and a soft touch of old leather and almond skin—subtle signs of graceful age. On the palate, it’s silky and composed. Flavours of baked apple tart, soft baking spice (cinnamon, clove), and barley sugar lead the way, balanced by hazelnut, gingerbread, and dried citrus peel. A faint herbal touch—sage, mint, and chamomile—adds elegance. The oak is present but refined, offering a dry, aromatic backbone without overpowering the spirit. The finish is long, mellow, and warming—lingering with notes of toasted oak, white pepper, honeyed malt, and orange marmalade, fading into a whisper of old beeswax and spiced biscuit.
