The nose is wild and expressive—bursting with green apple skin, young cereal grain, and unripe banana. There’s a strong fermentative funk, reminiscent of natural wine or mezcal, alongside notes of wet hay, sourdough starter, and lemon pith. Underneath lies a trace of vanilla essence and raw oak. On the palate, it’s raw but energetic. Flavours of pear drop, citrus peel, and cracked grain dominate, with a sharp backbone of white pepper, ginger, and chalky minerality. A hint of yogurt tang, green herbs, and bitter almond give it a lively, almost chaotic complexity. The mouthfeel is light but prickly—like a cross between a young agricole rum and an unaged whisky. The finish is short and bright, fading with notes of green spice, raw wood, and sour citrus, leaving a tingling dryness.
