Rustic, bold, and full of terroir, the Coppersea 3 Year Old from That Boutique-y Whisky Company captures the raw energy of traditional American craft distilling. Using floor-malted grains, open fermentation, direct-fired stills, and minimal filtration, Coppersea delivers a whisky that feels both old-world and experimental — expressive of time, place, and process. The nose is earthy and assertive, with notes of damp grain sack, molasses, and overripe orchard fruit, layered with leather, fermented apples, and a touch of barnyard funk. Beneath the rustic intensity lie hints of dark chocolate, charred oak, and black tea. On the palate, it is full-bodied, oily, and unapologetically bold. Flavours of smoked cereal, burnt caramel, and stone fruit compote mingle with robust notes of spice cake, clove, and blackstrap rum. The texture is chewy, with a balance of sweet malt and gritty tannin that keeps it complex and grounded. The finish is long and warming, fading with notes of dried fig, cocoa, roasted nuts, and a lingering wisp of wood smoke and barrel char.
