The nose is powerful and expressive, leading with fresh sawdust, caramelized brown sugar, and vanilla bean, followed by grilled corn, cherry cough syrup, and cinnamon bark. Despite its youth, there’s depth—rich oak char, a hint of leather, and a smoky edge likely imparted by 291’s signature aspen stave finishing. On the palate, it bursts with bold character. Flavors of sweet cornbread, dark treacle, and toasted marshmallow flood the senses, quickly joined by cracked black pepper, cloves, and burnt orange peel. The texture is oily, with a grippy spice that builds heat. Hints of campfire smoke, tobacco leaf, and barrel char round out the back palate, giving it a smoky, rustic backbone.The finish is surprisingly long for its age—hot and spicy, with lingering notes of maple candy, nutmeg, and aspen smoke, gradually drying to a peppery fade.
