The Elsburn 7 Year Old opens with a rich and layered aroma, immediately showcasing the distillery’s signature sherry-cask influence. On the nose, you’ll find stewed red fruits—raspberry jam, fig compote, and black cherry—mingled with notes of toffee, leather, and spiced oak. A gentle waft of pipe tobacco and dark chocolate adds further complexity, while hints of cinnamon and nutmeg round out the bouquet. On the palate, it’s luxurious and full-bodied, with a silky texture. Flavors of dates, dark honey, and sultanas take center stage, supported by marzipan, clove, and a dash of espresso. There's a beautiful interplay between sweet and spice, with layers unfolding gradually—fruitcake richness, burnt sugar, and even a hint of smoky char. The finish is long and indulgent, carrying forward the dried fruit and nutty notes, with a final flourish of spiced cocoa, old wood, and a faint touch of herbaceous bitterness that balances the sweetness.
