The nose is rich, malty, and delightfully earthy. It opens with notes of fresh sourdough crust, hay bale, and stone fruits, followed by hints of green apple, herbal honey, and toasted hazelnuts. Underneath lies a rustic complexity: linseed oil, grain sack, and sweet pipe tobacco, balanced by a trace of warm spice and dried herbs. On the palate, it’s oily, nutty, and grain-forward. Flavours of brioche, poached pear, and heather honey blend with clove, cracked pepper, and orange zest. The texture is chewy and full, showing the influence of traditional floor malting and long fermentation. Mid-palate brings a subtle earthiness—toasted grain, dusty oak, and a hint of farmyard funk—which adds dimension and uniqueness. The finish is medium to long, warm and slightly drying, with lingering notes of malt biscuit, dry spice, and citrus oils, fading into a clean cereal sweetness and light minerality.
