Elegant, bright, and distinctly Welsh, the Penderyn 12 Year Old from That Boutique-y Whisky Company offers a rare glimpse into the long-aged potential of one of the UK’s most innovative craft distilleries. Known for its use of Faraday stills and a light, fruity spirit style, this 12-year-old bottling brings together maturation depth with Penderyn’s signature clarity. On the nose, it’s vibrant and polished — ripe tropical fruits like pineapple and mango, lifted by green apple, vanilla pod, and a touch of white pepper. Hints of candied lemon peel, light oak, and honeycomb add complexity without heaviness. The palate is smooth and fruit-forward, with flavours of peach syrup, barley sugar, and lemon tart, followed by elegant layers of soft spice, clotted cream, and toasted almonds. The distillery’s signature lightness is still present but now wrapped in richer textures and mellow cask influence. The finish is medium to long, clean and satisfying — leaving notes of vanilla fudge, gingerbread, and a faint echo of dried apricot and oak spice. It’s a whisky that showcases how maturity enhances Penderyn’s bright profile without sacrificing its vibrancy.
