Earthy, elegant, and infused with a sense of place, the Santa Fe Spirits 5 Year Old from That Boutique-y Whisky Company captures the unique high-desert character of New Mexico in a bold, barley-forward dram. Crafted at 7,000 feet elevation using local mesquite wood and custom stills, this single malt is truly terroir-driven. The nose opens with notes of toasted malt, campfire smoke, and baked apples, followed by hints of leather, cedar, and a soft earthy minerality. A wisp of mesquite wood smoke adds a distinctly Southwestern signature — fragrant, dry, and subtly sweet. On the palate, it is robust and slightly oily, delivering flavours of roasted nuts, cocoa powder, and dried apricot, wrapped in warming notes of black tea, charred oak, and a hint of desert herb — think sage or rosemary. The malt remains at the core, enriched by gentle wood influence and a kiss of smoke. The finish is long, warm, and dry, lingering with impressions of spiced caramel, dried fruit, peppery oak, and that signature mesquite tail — subtle but memorable.
