Bold, modern, and richly textured, the St. Kilian 5 Year Old from That Boutique-y Whisky Company showcases the emerging power of German single malt whisky. Distilled in traditional Forsyths copper pot stills and often aged in a mix of ex-bourbon, PX sherry, and other specialty casks, this 5-year-old dram offers impressive depth and complexity for its age. The nose is warm and expressive — with notes of raisin bread, toffee apples, and grilled apricots, accented by hints of vanilla pod, cedar spice, and a touch of smoke (depending on batch). There’s a malty backbone with a hint of alpine herbs and dark fruit syrup. On the palate, it’s full-bodied and lively. Flavours of chocolate-covered raisins, honey-drizzled oats, and baked plum lead the way, followed by spice cabinet warmth — cinnamon, clove, and a hint of peppery oak. A faint thread of smoke or char may appear, lending grip and balance. The finish is medium to long — malty, gently spiced, and slightly nutty, with echoes of fruitcake, dried orange peel, and caramel glaze.
