Produced in Melbourne’s temperamental climate, this straight rye matures quickly, developing depth, dryness, and a complex spice backbone in just three years. The nose leads with punchy aromas of cracked rye grain, peppercorn, and dark honey, rounded by hints of sandalwood, eucalyptus, and charred oak. There’s an earthy freshness that evokes sun-dried herbs and spiced bread dough. On the palate, it’s robust and chewy — showcasing layers of caramelised rye toast, ginger snap biscuit, and burnt orange zest, followed by notes of clove, dried mint, and a hint of sarsaparilla root. The oak integration is confident, adding grippy tannins and a touch of vanilla pod. The finish is dry and persistent, lingering with peppery rye spice, charcoal dust, and a herbal-bitter echo reminiscent of black tea and rye husk.
